A seasonal and unique foie gras naturally obtained in winter time from our geese, a variety descending from the European wild goose "Anser anser“, raised in our fields that maintains the winter migration instinct. The only foie gras in the world obtained without gavage (forced feeding). A seasonal foie gras naturally obtained in winter from our geese, raised in total freedom and fed on seeds, natural grass and acorn. A smaller foie gras than the “forced feeding” one, with a more intense flavor and with less fat (more protein/fat ratio). Shows countryside traces and a less buttery profile.

TASTING
Best moment to enjoy Foie Gras is during appetizers or at the begggining of the meal, when the palate is not yet influenced by other flavours. We suggest to cut small slices from the glass pot and places them (not spread them) on toasted bread triangles, or even better on toasted brioche and to sprinkle some salt flakes. Once in your mouth, push to your palate and enjoy while the foie gras melts.

MARIDAGE
The unctuous character and the creaminess of the Foie Gras demands an excellent late harvest wine. Better avoid young wines. Traditionally the wine that goes with Foire Gras is Yquem, Sauternes or Jurançon. For a more modern combination we suggest rosé Champagne, sweet white wines from Jerez (Pale Cream) or Porto wine. If you want to enjoy our foie with a bit of marmalade or chutney,  we recommend to avoid citric fruits, and try apple, figs or more exotic mango.

GOOSE “SECRET”

Obtained from our geese, a variety descending from the European wild goose "Anser anser“, raised in our fields while keeps its winter migration instinct. The “secret” is the breast of our geese salt-cured, a very high quality red meat. Like the “jamón ibérico”, it shows fine intramuscular fat lines, between the meat fibers thanks to the acorn and the “free range” life style. When we see those white lines we say that the “secret” is infiltrated. That is one of the unique characteristics versus the duck “magret”. That fat, really tasty and flavoursome, is somehow healthy thanks to the acorn fed regime and the freedom lifestyle of the geese. Cut in lenghtwise slices, as it delivers a better organoleptic experience.

Product name, “secret”, like the recipe where it is based, has its roots in local traditions going back to the time when Sephardim lived in the region and raised geese for their consumption.

TASTING
Remove from the fridge and place in a tray some 15 minutes before eating, leaving it at ambient temperature till its consumption. This allows the ”secret” to partially melt the inner fat so all the taste and texture characteristics do come alive. Place the slices on top of small bread toast and enjoy it.

MARIDAGE
We recommend a classic and well aged decanted red wine like Bordeaux, Bourgogne, Rioja o Ribera del Duero.

Obtained from our geese, a variety descending from the European wild goose "Anser anser“, raised in our fields while keeps its winter migration instinct , producing a unique quality red meat. Our Rillettes are made of meat fibers from our geese, slowly cooked at low temperature. With a fine and soft hunting flavor, also shows countryside traces due to the free range raising at the “dehesa” with its pastures and acorn.

TASTING
Remove from fridge some 15 minutes before tasting. That will allow a partial meltdown of the fat inside the meat fibers, so we get a perfect texture and all the taste details. Spread on small toasts and sprinkle some slat flakes. If you want to enjoy our rillettes with a bit of marmalade or chutney,  we recommend to avoid citric fruits, and try apple, figs or more exotic mango.

Made with the legs of our own geese, they are salted, spiced and slow cooked in their own fat. With a fine hunting flavor, it shows countryside traces thanks to its acorn, natural pastures and seeds regime and plus its free range lifestyle.

TASTING
Remove from bag and heat in the oven some 10 minutes to achieve a crunchy texture. We suggest to enjoy it with a puree, potato ”gratin”, chutney, apple , fig or mango marmalade.

MARIDAGE
We recommend a classic and well aged decanted red wine like Bordeaux, Bourgogne, Rioja o Ribera del Duero.
